Whipped Porridge
"Authentic flavours" from the old farming households:
500ml water (for 5-6 portions)
100g oats
250ml Björnåsen lingonberry juice concentrate
Powdered sugar to taste
Boil the water. Add oats and stir well. Allow simmer for 5 minutes, stirring in the meantime. Add lingonberry concentrate. Remove from the stove and whisk the porridge vigorously until it has cooled and become fluffy. It takes around 5 minutes with low speed electric whisk. When using a hand whisk is makes the distinctive "flap-flap" sound but this takes about an hour..
